Title: Fall Turkey - help on field dressing and best use for the meat?

I've raised my own turkeys and butchered them.  But never dealt with wild turkey.  What is the most common approach?  Treat like a typical thanksgiving turkey and clean and pluck and then cook the same?

I cleaned/plucked (using the wax bath method as it's easier) then put in the freezer.  I brined my wild turkey from April's spring hunt over Labor Day weekend for 2 days, then smoked it in my outdoor smoker.  Turned out very well.  Was my first wild turkey.  The breast portion tasted just like a store bought bird.  The legs were a bit tougher and you could tell the wild birds have some thicker tendons and silverskin in those legs.

Normally I filet out the breast.  Cut them into chunks and bake them.  I have seen them done into turkey strips.    Legs throw them in a crock pot and cook them down.  The meat will fall right off.  Make soup or stew out of it.
