Wanted to try a little something.
Thawed out a small lean roast and cut it up. Got about a 1/4 to a 1/3 the weight of the venison in fresh pork fat. Cut it up, give a nibble to the dog, tell Alexa to play some Jim Croce. Dice two serrano peppers, some grean onion, fresh ginger, and add some garlic, salt, pepper.

Run the meat through the grinder on medium grind, add veggies and a splash of soy sauce.

Once done, run through one more time. Prep your wrappers and get to filling.

I like to give them a quick few minute boil then hit the fry oil. Serve with a side of sweet and spicey chili sauce and you are good to go.

Ok...fried was good but i did a few batches in the skillet. Add a pour of the chili sauce and some nice sized slices if sweet onion and color them up. They really get some flavor in the wrap and make for an awesome big bite. Sorry no pics as i was busy cooking and eating!

i did it it was good but i need to figure something to flavor the wrap.A little cheese inside half of them was awesome. What did you do to the wrap to give it better flavor than just flour?thanks again.

Thrown in the pan with sauce gave the wraps both flavor and good texture. Kinda like frying chicken.....you gotta leave it alone for a few min to get that good color abd texture.

What would you think of not only using venison but ground lamb in this recipe? Talked to the wife and we will be trying your recipe with some being ground venison, some ground lamb, and some a mix of venison and lamb! I can't wait to try this out!

You cooking a batch of these on Skillets boat come blackmouth season? Would make extra great boat food.
