Gluten free walleye recipe?

Ordered up a box of frozen walleye fillet and want to do up a good dinner. Wife is celiac so no gluten for her. Anyone got a good breading or baked walleye recipe? Really dont want to have more fried foods in my diet if i can help it.

My fiancÚ has Celiacs as well.  It's harder at times for her, but for the most part there are substitutes for almost anything. Most are more expensive though. Gluten free bisquick is a good all around mix though.  Even Safeway has their own brand of gluten free baking mix now.  I'm sure you could use either as a breading.  Probably better for frying, though it should work.

I'll look for the name but there was a company a year or so ago in Portland that sold gluten free batter mix. Added a little Redbridge beer and made my brother in law his first gluten free beer battered lingcod.....I'll look around and see if I can post.

Sysco. Have a friend who is in the restaurant industry order it for me. Comes from Canada

Use instant mashed potato flakes like flour.  Season the potato flakes, dunk filets in egg and dredge in the potato flakes and fry like normal.  Make sure they are the flakes and not the crumbly type.  You will love this.  My wife and I make this all the time and we are not gluten free.

Be very careful with this if you try it.  SOME of the instant mashed potatoes are not gluten free.

Bobs Red Mill out of Portland OR makes lots of gluten free substitute  for flour.
