Does the attachment up high like that cause any handling issues? To me it looks like a load could try to toss you around a bit

Even the cheap kid trailers have a 100lb rating. That's enough for a pack filled with boned out meat from a deer.

I've had the racks loaded with 60 pounds each and it did well.  I would love to get a used bike trailer that I could modify to care game in.

As others have pointed out there is a significant benefit in capacity with the trailer. Can you speak to any other benefits over racks/panniers?
