clam strips/necks need ideas
« on: November 04, 2012, 11:58:35 AM »
well it seems the bag I thought was frozen cod/white fish is actually strips of clam ...I am not a fan of clams I am even less a fan of waste so trying to find a way to prepare these and sort of disguise that they are clams.

we have a laundry list of cannot do...no chowder(I cant do milk) no cheeses as kid can't have cheese right now, so alfredo type white sauces also out.....

tempted to either bread and fry to kinda crispy and then dip in something or maybe saute with onions garlic and stuff.....anyone got a good way to make these clams less clammy  :dunno: :chuckle:

if they're razor clams, put them between plastic wrap and pound them just a little, bread them with panko and fry them in a 1/2" of hot olive oil. Good stuff.

To bread, dredge in corn starch, then beaten eggs, then the bread crumbs, right into the oil.

Just make clam strips. Bread and fry, they are awesome.

How big of strips would you say they are?

Bread them with ritz crackers with a little salt and pepper. Then broil them on a cookie sheet for 2mins turn them over and broil them for 2 more minutes.

Dredge them in eggwash, roll them in cracker meal and a bit of old bay or garlic herb, fry in oil. Make a tartar for dipping...

We had geoduck this weekend. One three-lb clam is worth $105. We ate the siphon in a raw ceviche (thinly sliced with lemon juice, salt, and green onion), and sliced the body into medallions and breaded and fried it in olive oil. It was an amazing dinner.

no chowder(I cant do milk)

You're missing one of life's great pleasures. Manhattan Style Clam Chowder.

This is one of the many recipes, but you could substitute razor clams in the future.

Mouth is watering just thinking about it.

Fair warning.  It is the essence of life.  Full of bacony, spicy, tomatoey goodness.  You can always kick the clams to the side, if you don't like chawing on them. I am going to have to make a pot this week now.
