I have a big commercial 3 door stainless steel freezer. it is 72 in. long 32 in. deep and 80 in. tall.  Would something like that work very good for a smoker? There is plastic shelves in the doors that can be easily removed. The compressor went out on it.

the inside is also stainless most likely there is some insulation between the inside and outside layer of stainless.

are the rack ok to smoke on after cleaning? I herd on the net that fridge racks have something on them that can kill you when they are heated up?   :dunno:  If there is foam behind the plastic would that have to all be taken out or would sheeting over it with stainless sheet metal be ok?
