Black Bear Barbacoa


Ok here is another one, and yeah I took pictures of it again  :chuckle:

Barbacoa has been on my “to-do” list for a while, apparently it is traditionally done with beef cheeks(?).  I talked my wife in to trying to make it and she did it with a beef chuck and boy did it ever turn out good!  So, what’s a guy to do!?  I grabbed my LAST 2 bear roasts and went for it!  We made BEARbacoa!  So here’s the recipe, make it with beef chuck roast or black bear roast


Barbacoa

2-3lbs Bear roast or beef chuck roast
1 7oz can of chipotle peppers in adobo sauce
1 cup diced onion
3 (or 12, i'm not here to tell you how to live your life) cloves of garlic
1/4 cup of soy sauce
1/4 cup of Worcestershire sauce
Juice from 2 limes
2 tablespoons of sugar
1 tablespoon fresh chopped oregano
1 tablespoon ground cumin
2 teaspoons paprika
1 teaspoon salt
and some pepper

Cut the meat up into 2”-3” cubes and throw it all together in a crockpot and simmer on high till the meat is shreddable, and put it on tacos!  My wife just throws it in the crockpot raw, but I like to sear the meat real good on all sides first.  I'm not sure who's is better, it’s just what I like to do.

Gutter Runner's Potato Soup

1lb Thick cut Bacon, cut in 1” pieces
5# Potatoes, 1”Cubes
2 Large onions, diced
5 Celery stalks, diced
5 Carrots, shredded
12 Chicken Bouillon cubes
3 ½ tsp Salt
2 tsp Fresh Ground Pepper
2 tsp Fresh Minced Garlic
3 ½ tsp Fresh Basil Leaves
1 tsp Crushed Red Pepper flakes
5 tsp Frank’s Hot Sauce
1 stick Butter
16oz (1 Pint) heavy Whipping Cream

Fry bacon, leave some grease in bottom of pan. Set aside.

Add potatoes, onions, celery, carrots. Cover with water, bring to boil, add all seasonings. Cook at steady low boil 2-3 hrs. If soup starts getting too thick, add water and reduce to simmer.

Once it starts to thicken and boil down add butter , bacon, and whipping cream

Simmer 1/2hr and serve.

Fritters   Clam!

Razor clam fritters

5-6 razor clams, partial frozen, chops of best then.
1 box  hash browns Costco brand in the milk carton
2 slabs of onion slice onion slabs into quarters
1 egg scrambled
1/4-3/4 cup flour
Salt and pepper
For a different taste  cut the flour in half and add Panco

Chop clams in food processor add rehydrated hash browns, add onion  blend.
Put mixture into bowl  add egg and flour to creat a thick dough.  Use two small spoons to put into a skillet with 1/4 hot oil(350).  Make scoops  bite size and they will brown quickly   When golden brown put into a toaster oven about 300 while cooking all of them to keep hot also to finish cooking the center.   

Serve with tartar sauce or sweet chile sauce!
