Tuna bagel

One can tuna mixed with your choice of sweet or dill pickel relish, mayo, a little dab of mustard and some pepper and red pepper flakes.  Spread half the mix over each half of a sliced bagel.  Place in the over at 350 for 10 minutes.  The last couple minutes melt a slice of cheese over the top.  Absolutely delicious.....one of my favorite quick easy no mess dinners.

We do breakfast for dinner a few nights a month around here. Pretty quick and easy to do waffles or pancakes. I also tend to keep a few mountain house biscuits and gravy in the pantry. They are quick and easy and tasty enough :chuckle:

If possible, meal prep Sunday evening for a couple meals. Pre make one or two meals and then cook something in crock pot that you can reheat. That's 3-4 suppers right there.

One pan meal. Fresh veggies sliced/diced, microwave white or brown rice, your favorite protein diced or sliced and cooked first, and then add you favorite sauce and spices. For an extra special treat, fry an egg and throw on top when you serve and let the yolk run all over it.
