Addicted to chuck rolls

I just bought my third chuck roll.  Cut off the chuck eye steaks (LOVE those), 3 chuck roasts, and grind the rest into burger.

First chuck roll I took the steaks and roasts and made the rest into beef sticks.

Second one, I wasn't paying attention and bought the "Sliced" chuck roll.  Not what I wanted but, it is completely sliced and now we have 30lbs of fajita/Philly Cheesesteak meat.

This third one will be cut up tomorrow into steaks, roasts, and burger.  It will avg. out to about $6.50/meal for a family with 2 teenage boys and another boy that is almost a teen.

You a meat cutter? not to many folks know about chuck eyes. I miss the old days of cutting meat.

Nope.  Actually found chuck eye steaks at Wal Mart once, years ago.  A google search later and I know all about them :chuckle:  Now I love them.  9/10 as good as a rib eye at a fraction of the price.  I'm guessing they'll skyrocket in price like short ribs did a few years ago when all the cooking shows started using them.

As much as I love chuck eye's, I'm actually more excited for the roasts.  My wife makes a KILLER pot roast. :drool:

If you can find chuck rolls you will get the best chuck eye steaks which is the first 3 or 4 inches from the rib side.  I wouldn't buy a chuck eye steak from a store.  Just because you don't know how far they cut up from the rib side and it can start to get tough up that way.  But awesome steaks and great hamburger.  I'm not a roast guy.

Cash & Carry.  $2.89/lb  Last one I grabbed was 29lbs.  The one in Lacey always has them

The last chuck eye I bought I ground into burger and made sliders over a wood fire.  Maybe the best burgers I have ever eaten.

Look for the "Sliced" chuck roll.  Cash and Carry has them right by the whole chuck roll.  The sliced version is more expensive though

I have been eating chuckeye steaks for about 15 years. We first were introduced to them by Gene, the butcher at the old Summit Trading grocery store on Canyon road. We were hooked! Back then they were like $1.79 pound. Now they are at least $5.99 or more.
So this chuck roll idea got my attention, I bought a 21 pounder at cash n carry. Cut 4 nice steaks, cut a large roast, cut a few pounds of stew meat and then ground the rest into burgers! Oh my, the burgers were absolutely awesome! I will do this again! I believe I paid $2.74 a pound for the roll.

My wife doesn't know it yet but, I'm going back for another one later this month.  Shooting for a 30lb'er.  We'll see what they have in stock.
