What elevation are you seeing Huckleberries? I set some trail cameras last week around 3300 and did not see anything ripe. Or I was not paying enough attention |

Ok......so......you all are going to say that I'm crazy......but just hear me out...... Pickled Huckleberries...... Heat 1/2 cup white vinegar with 1/2 cup sugar and 1/4 teaspoon salt until dissolved. Add 5-8 black peppercorns, 10 coriander seeds, 1 inch piece of ginger and 1 star anise pod. Dice 3-4 shallots and add to 2-3 cups whole huckleberries. Add hot liquid over berry/shallot mix and let stand for a few hours. Serve pickled huckleberries with chicken or tuna on a salad. It worked well with some grilled albacore. A friend asked me to make tuna salad. This is what I made. |
