Thanks for screwing up my day Alaska Airlines! Received my flight information from Chris. Fish will be in at PDX last night for 5 am pick up this morning.  Arrive PDX at 6 am. They have no record of shipment.  Seattle decided to hold on to them. Now due to arrive at 11:30 am. Thanks for the phone call Alaska, you may have 4 and a half hours to waste I personally don't. Now I am hoping they arrive in good shape.
Can you tell I'm a little miffed...

They were great. The fish were cold and solid when the boxes were opened, no fishy smell, just pure deliciousness. Some real hogs in there too. Only thing better for me would have been being the guy in the cockpit yanking those suckers in.

I've got a brand new grill at home waiting on some fresh coho fillets tonight. Can't wait. I'll definitely post up some pics. The fillets are chilling on ice in the RTIC right now.

As someone who has only caught, cooked and enjoyed late run Kings at the reach in October, and never touched or even seen a coho, what's your seasoning and cooking plan on the grill?

Or any other recipe ideas.

I'll save all my smoking for the king's this fall...

My wife has a recipe for a honey brown sugar glaze with a dill sauce that my mom got from a lodge up in AK. I don't have the exact recipe offhand but it's amaze balls. That's probably not what we'll do tonight because it's a marinade and we don't have time for that nonsense today. I'll see if I can find something at least similar online.

I personally try to keep my fish recipes pretty simple. One of my standard go tos is to brush the fish with olive oil and put a good sprinkling of Montreal steak seasoning on it. That one never fails the taste buds.

My wife likes lemony / dill flavoring, so we often do Johnny's salmon seasoning mixed with fresh dill. I will usually sprinkle on a little bit of Chipotle l powder to give it it just a touch of smokey heat.

Coho in general aren't as oily as kings are, so I usually coat the fish with olive oil, or melted butter beforehand. Makes a big difference.

For fresh fish, I keep it real simple too.  Leave the skin on the fillet.  Coat both sides of the fillet with olive oil, then salt and pepper the flesh (or use  Montreal or Johnny's, etc, just not too much).  Grill flesh side down on medium high heat for about 7 minutes until the flesh "releases" from the grill, then flip onto the skin side for another 3 minutes or so.  After you flip it over, don't be afraid to open the flesh a bit to see how it's cooking.  You want it cooked through, but not by much.

Why do I see so many people putting the fillet skin side down on a piece of foil and then onto the grill, and what seems to be no flipping involved?
