3-2-1 method. Night before put seasonings top and bottom. Pulled them out an hour prior to the grill to warm up some. Mixed apple juice and mustard and brushed a light coat top and bottom. Seasoned a little more. In the Traeger @ 180 for three hours. Pulled them out, wrapped in foil with some brown sugar and apple juice, back in the Traeger for two more hours @ 225. Unwrapped, brushed a little BBQ sauce on top, and back on the grill for one more hour. The beef ribs were great, just a little tougher than I'd like. The baby backs were fantastic and fall off the bone tender. |

This is what I did with my Traeger Costco Select Elite which is 3 years old. Installed a PID contoller with wifi. The way to go. Percise temp control in PID mode. Only a 5 degree swing in temp cooking some chicken breast the other day. From what I have read most grill that have wifi controllers are PID. Also a pic of some halibut I did.
