Pemmican question

I wanna get into making pemmican for the first time, and I was planning on using some of the meat from the buck I shot last year. Well gosh darn if we didn’t accidentally eat up all the packages of steaks and roasts, however I’ve still got some packages of burger. I believe the burger is 70:30 or 80:20 with beef fat.
How do you think this pemmican would turn out if I dehydrated that burger then threw it in the blender to get it good and diced up?

Well SHUCKS....I had never heard of such a thing. Now I have to try it. I just watched a youtube video where a guy dried fruit to put in it. His recipe looked amazing and actually tasty. I want to use bear tallow instead of beef, but otherwise think I will follow that recipe. I imagine it would be a great, lightweight, protein packed food for hiking.
The only reason I could see your burger not working is the amount of fat. The youtube video I watched was very specific to having a very lean cut of meat.

I don't know if it would work on raw meat, but in another group i am in we rinse the meat in boiling water to remove the fat

That was my concern, that since the fat is ground into the venison that it won’t turn out. I’d hate to go through all the trouble and work just for the fat to make it rancid
I’ve seen the recipes with berrys and it looks delicious! I’ve also seen some with peanut butter which could be good too.
Maybe I can trade a buddy some burger for less desirable cuts of steaks

My Grandpa, who was 100% Cherokee, was telling me about Pemmican one day. After he told me his Mom always insisted he always have Pemmican on him for emergencies. I asked him what Pemmican tastes like?
He said, "think of Beef Jerky, that smells and tastes like wet dog. You will only want to eat it in an emergency when there is nothing left to eat. But there was nothing better to have with you if you needed it"
I have tried it, it is nothing I would make out of choice. But it had a purpose in it's day. :tup:
