Recurve arrow selection help...

Finally broke down and bought my first recurve bow. Went with a Martin Jaguar 45lb @ 28". Got set up with some arrows at the shop and have started shooting quite a bit. Looking to purchase more arrows but want to make sure I'm getting the correct spine. The shop set me up with a pretty light spined arrow 550, but all the charts I look at are saying I need a 300-400 spine arrow. My draw length is 29.5 -30 inches on my compound bow and my arrow length with the recurve is 29.5". I plan on shooting 125 grain broadheads.
So....for the folks that shoot traditional, how do you determine your spine?? The charts are all over the board. I will say that they shop that set me up is very knowledgeable and the worker is a die hard traditionalist.
What arrows do you like, carbon, aluminum, wood....???
What brand arrow??
What broadhead??

Gold tip Traditional arrows(carbon). I got lucky with help from the shop. I think I started with six then went up or down by the way it was shooting. Then once locked in bought a couple dozen. Then haven’t changed. I think my set up is under weight, but results have been good so….
Broad heads are magnus stingers two blade. 125s (I think)

He does in fact make beautiful arrows. Another one is Jay St. Charles or his wife. They are works of art.
