Cooking is sort of therapeutic passion. Turning my fish and game bounty into fine meals is so satisfying. Ive had this book for 30 years. Many remarkable recipes. Cherished family favorites and special meal memories abound. Curious who else has this book and some of your favorites. |

I don't have that one. I have about 50-60 others, though. James Beard is a favorite PNW chef and I have a few of his. New Fish Cookery of his is a favorite. I also have quite a few from the chefs I've worked with for many years and the CIA cookbook, The Professional Chef, Larousse Gastronomique, And The Elk Hunter's Cookbook (which hasn't been opened in quite a while). I might check yours out. |

Like many cookbooks this one is structured by categories….soups, salads and appetizers; fish and shellfish; meat, poultry and game; vegetables, grains and preserves; desserts, coffee and beverages. Interspersed are sections discussing history and highlights of various regions of the PNW: Vancouver Island and the San Juans, Eastern Washington, Western Oregon, etc. Some of our favorites: Scotch Broth which calls for lamb but I substitute deer or antelope. Crab Louis, the original from the old Olympic Hotel. Oyster Stew Hangtown Fry Cranberry pot roast which is amazing with any game roast but especially bear The canning section is quite good with preserves, chutneys and such Huckleberry slump is a favorite done up in a Dutch oven Im not even scratching the surface really. If you can find a copy I highly recommend. |
