Hey I managed to pick up a buitifull 14 lb silver yesterday (hen) and I was just wondering if it's o.k to freeze the uncured eggs untill I'm ready to cure them? Will this screw up the eggs or is it o.k? Thanks!

You can get a cheap zip lock bag machine for $30, this works great for any meat, including fish eggs, it's all about getting the air out. If you do that and cure them prior they should be great for a year.

Put them in Cure for a few days and vac seal them in jars and them freeze. NEVER freeze first. The little ice crystals will puncture the membrane and when they thaw you will have egg goo.

O.k 1 more question. I cant get any cure fore my eggs until probobly friday, will the eggs stay good in the fridge until then? That will be 5 days.
