1lb groundmeat ( elk ) hahaha
1 cup chopped onion
1 cup chopped bell pepper
1 cup of the pulp chopped from the zucchini
1 cup rice
Brown meat in pan ..add all ingredients with a touch of salt - pepper and garlic salt . Let Saute about 10 min. then add 1 can hunts pasta sauce ..8oz or so ...mix sauce until thickened .. Stuff Zucchini and BQ about 20 min. top with parmesan cheese until melted ....Serve and enjoy FORGOT ONE THING :bash: :bash: Once you cut the Zucchini in half take 1/2 cub of butter and melt it in your micro ...15 seconds or so then add a little olive oil to the butter and mix well then brush on the inside of your zucchini THEN STUFF ....THEN STUFF :chuckle: :tup:

Hopefully next year we can make it to the BQ ...Its just tough being this far away ...but if we have as good as a sockeye season next year as this year we are coming with the salmon ....I am not guaranteeing but I will plan sooner /// :tup:

Well let me know how it goes.. I like mushrooms and I will add that next time :tup: and I did make 6 loafs of Zuchini bread but when I went to buy what I needed it cost me $35 :yike: some damn exspensive bread :yike: :yeah:

Holly molly! Glad we didnt wait till tonite to stuff a zuc! Incredible flavor and taste! Done on the BBQ you gets the flavor! Wont have much zuc left with this recipe. Thanks for the post! :tup:

Made some tonight. Really good. Used a spanish rice mix with it. Tossed some small tomatoes in the mix. Took some pics. Will try to post them. I ate so much I think I hurt myself.
