I got some walleye that needs cooked! I need some great recipes!!

salt and pepper to taste mixed with 50/50 white flour and panco bread crumbs. dip fish in milk and dredge in the mix. Deep fry and eat.

dip em in egg then in whatever chips you want. I've tried a bunch and they've all been good.
or saltine crackers, ritz, cheez-its, whatever is laying around, then throw in some parmesian.
as long as it's fried! :)

My longtime favorite has been doing a beer batter and then making fish tacos. Maybe tied with that is dipping them in egg and crusting them with a mix of flour and crushed up spicy pork rinds. It's almost like having bacon-wrapped walleye.
A very close second is frying them in a premix seasoning like Shorelunch.
If the filets are big enough, bake them like halibut. Damn fine eating.
Hard to screw up walleye!

I grew up eating them one way, and one way only... dip filet in egg and then in Kellogs Corn Flake Crumbs (already crushed version has more uniform sized pieces), then deep fry in peanut oil.
While hard to beat, I do that or some variation of it for all of my white meat fish like lingcod, rockfish, flounder, bass, crappie, etc. Halibut I use more variety of cooking methods.
One variation is to add some Zataran's Fish Fry to the corn flake crumbs and the other is to dip in egg, then roll in instant potato powder, then deep fry.
I believe deep frying, rather than pan frying and flipping them produces a better filet as all of the moisture is locked inside the crust formed by the coating and not allowed to vaporate or ooze out of the side that is not being cooked.
Having to worry about walleye recipes is not a bad problem to have. :chuckle: :drool:

I do almost exactly what DoubleJ does but instead of milk I use egg whites to dip them in. A little Johnnys for seasoning also. Sometime instead of the flour/panko mix, I use instant mashed potatoe flakes. Very tasty.

Personally, I grill most of the walleye. Leave the skin on and cook skin side down. Baste with butter, touch of lemon juice, pepper, fresh garlic and onion flakes. I leave the frying to the bass, crappie, bluegill, perch, ling, etc. Walleye tastes too good.

My girlfriend only eats gluten free stuff so I stumbled on this recipe through trial and error and it's now my favorite batter. Use equal amounts of gluten free potato flour and corn starch, 1 cup each, Lowreys seasoning to taste, 4 eggs and enough gluten free beer to make it sticky but not too runny. dry off the fillets and dredge them in the batter then fry in hot oil. Delicious! :tup: Makes great onion rings also. If you arn't alergic to gluten feel free to use whatever beer you like. If you don't drink alchohol, Odules works great, I prefer amber.

This is exactly what we have at our fish fry at the cabin in archery season. Most guys end up burnt.... it rarely makes to a table before it's gone :chuckle:
