Title: Bear Jerky

I want to try making some sliced bear jerky with a dehydrator.  I know that bears can have trichynosis (sp?).  Does anyone know if making jerky with the dehydrator will be safe, or do I need to cook it first?  If you cook it, do you lose some of the flavor?  How do you best cook it to make the best jerky?  Thanks for the help!

I would suggest cooking it. When I make jerky out of it I do the burger type jerky and it basically cooks in the smoker. I have had it done from strips of meat and it always gave me the heebeejeebees. :yike:
