Title: Smoked Duck
Post by: Kioti on August 31, 2012, 08:33:47 AM
I just finished a batch of smoked duck the other day.  I made up some honey/orange/garlic marinade and soaked them over night in the refrigerator.
I then dried them out and and let them get to room temp.  Then into the Smoke Vault they went.  I used apple chips and smoked them for about 2 1/2 hours at 250.  After the first 30 min, I basted them with honey and orange mixture, every 30 minutes until done.
Yummie...Smoked duck...going to have to do more.

How much of everything did you put in the marinade. Sounds great!

growing up my dad had an artist friend who was an avid hunter and the only way I ever had duck was smoked over a fruitwood fire it was always delicious, this sounds awesome.

Never being the one to measure things out.  I juiced 4 oranges smashed a few cloves of garlic and then dumped in some honey to sweeten things up...all by taste for the marinade.
As for the basting I used the same method....2 oranges juiced, and I added a little honey to taste, and no garlic for the basting.
Sorry I can't help you with the measurements, I just dump things in until it all taste good to me.
One juiced orange is about 1/2 cup.
