Title: First clams
Post by: Gobble Doc on December 15, 2012, 10:21:06 PM
My son and I scored tonight for razors.  It was our first time.  Used a clam gun near the surf.  It probably took < 1 hour for us.  One held a gas lanter and the other used the clam gun.

If these are your first razors, then I have a question.  Do you know how to clean them?

Ask and yea shall receive...  Here is a clam cleaning tutorial I wrote a few years back...

31 clams, that's funny.  I counted over and over to convince myself I had 30.

We dipped them in boiling water just long enough to open the shell, < 15 seconds and then threw them into ice water.  Then I followed Iceman's cleaning instructions.  I think the final product looked pretty good but I should have taken a picture.  We have them on ice for tonight and then I will probably cook them up in the next day or so.  I'd like to try some clam chowder.

Thanks everyone for all your ideas and suggestions.

One more suggestion.  Make some clam fritters with some of them.  I don't think there is a better clam for fritters.

And....if you end up with a bonus in the freeezer later, clams not eaten, you can pressure can them with a bit of olive oil and liquid smoke for a great treat later around the camp fire. Smoked razor clams...... Yum!

I think we had 2 broken shells and I managed to clip part of the neck off of 1.  I was surprised at how many people were out doing this in December.

I think that will be our new years eve celebration. They are supposed to open the end of Dec. Then maybe the casino to top it off. Then a long drive home. They make great chowder but my favorite is fried razor clams.

I made the fried clams with Panko.  They were great.  Chowder next over Christmas.

 :yeah:

Another suggestion... for chowder, don't put them in until the very end, like the last 2-3 minutes of cooking.  Any more than that and they start getting really chewy and rubbery.

Oh, and if anyone would like to share a clam fritter recipe, I promise not to complain!

I find that if you separate the eggs and whip the whites and fold them last gently I get a slightly lighter, fluffier fritter
