Was wanting some simple but tastey recipies ya guys use for whitefish, never smoked or even had whitefish so fig why not and give it a shot.

Like the sucker fish whitefish?

4 cups brown sugar to 3/4 cup of salt.
step 1- mix together in zip lock bag.
step-2 set fish skin side down in a cake pan with sides higher than the fish.
step-3 pat fish dry with paper towel.
step-4 spread brown sugar/salt mix over fish so you have about 1/4 in covering all of the fish.
step-5 set in fridge over night.
brown sugar/salt mix will turn into a liquid.
after step-5optional ---(you can add coke cola so that it covers fish and let sit for an extra 4 hrs.)
step-6 take fish out and pat dry with paper towel
step-7 put in smoker until it is done to your liking.

Tag. The only whitefish I know are the lake and mountain whitefish. Used to catch the crap out of them on the Flathead when they'd migrate out of the lake. They're bigger than the ones you find in the rivers around here.

I used to catch them in the Yakima river all the time. average size was around 10-12 in. sometimes you can get a 14-16 incher. I fished the Columbia river a few times down below priest rapids dam and got some huge white fish. They are OK smoked. But I don't go after them anymore. They are an oily boney fish.
