I have a Batch cooking in the oven right now! Can't wait to try them.
I used a kitchen aid mixer with the meat grinder attachment to grind the meat and stuff the casings.

I did a 20 pound batch the friday after Christmas, had about 14 pounds of duck/goose breast and added 6 pounds of pork. I used the High Mountain Original snackin stick kit and it turned out pretty good. Enjoy.

Good to hear cause I used the same kit. I did not add anything else to it. It's my first try at it.

I got about 25 ducks and 14 buff geese I need to take out from the flock... :drool:

I've been making duck jerky for years but I always have a horrible time grinding the meat. It sometimes comes out of the grinder like a paste. I finally started taking it to a butcher just to get it ground. I hate spending the money on something I should be able to do myself. I bought the grinder from cabelas several years ago I believe it is a 1.5 hp grinder. It was advertised as a commercial grinder.
Any suggestions?

Is the blade sharp and lightly oiled? Is it assembled properly? Tightened properly?
Grind your meat while it is slightly frozen and it will go through easier and cleaner. I find that when it starts to come out with a bad texture it's time to clean off the plate. It will usually have a lot of sinew and fascia built up on it. Also, if the meat gets too warm it won't grind as well.
1.5 hp should be plenty. I make elk burger with one that is smaller than that and have done hundreds of pounds through it.

Don't grind it. Semi Freeze it and slice it to make real jerky. Not babyfood. If you can down load Tragers bar b q cook book. They have my duck/goose jerky recipe published in there. I have had cattlemen swere the bird jerky is beef!

This sounds a lot less expensive than me taking it to the butcher and having it done for $5 lb.

h2o,
I bought the kit for about $20 or so, came with the casing. I have shared it with a number of different people and everyone thought it was really good. High Mountain has a pepper snack stick mix too, I think I'll try that one if I can ever find the time and the place to start killing ducks and geese again.
