Title: Is there a class on Inspecting Small Game for Pathogens/Parasites?

Hi folks,
I want to learn how to identify signs of disease when I cut open a kill. Does any one know of a class or workshop for this purpose? Ideally I would learn which diseases/parasites render the meat inedible and which ones are not a problem. Thanks for any feedback you can offer.
