I bought a couple Landjaeger kits from PS to try in the smoker. This spice kit does 12.5lbs of meat but you need to buy casings separately. Thanks to Wea300mag and dogtuk for offering tips.

In an effort to make them fairly uniform, I cut the casings into pieces about 15 inches long. I probably stuffed them a bit too much at about ¾ full but they were able to flatten ok.

To flatten I placed them on cooking sheets, covered with butcher paper and placed another sheet on top. It was about 38 degrees in our covered patio during the day so I weighed the sheets down with a 5-gallon bucket full of apples. At night, when stacked in the fridge I put a 13lb pork butt on top.

I set them under a fan for an hour then flipped them over for another half hour.

About two hours in the smoker.

Looks like you know what you're doing :tup:  Landjaeger(Hunter suasage) although a long process done right is the only way to go IMO

I really need to insulate my smoker or build a new one. Finally after about 12 hours they reached an internal temp of 156 degrees.

I then placed them in a deep tub in the cold garage under a ceiling fan to cool for the night.

I’d say they turned out pretty good for homemade Landjaeger. Not excellent like I buy at Oscar’s Deli but good enough to eat.

Funny thing is.......I don't have to work today. Might go put out a couple cameras in the CF so you would have to find me up there.

Funny thing is.......I don't have to work today. Might go put out a couple cameras in the CF so you would have to find me up there.

 :DOH: That even worse.  Voluntarily waking up before 6am on one of your days off!  I wouldn't be able to function.  I know one thing at 6am in the morning the last thing on my mind would be taking pictures of my meat. . . .

First off, it wasn't voluntary. I just could't go back to sleep.
Trust me, I would have rather stayed in bed instead of taking meat photos.

Do you use a sausage stuffer or do you use your meat grinder for stuffing?

I have had issues getting meat grinders to work with stuffing.

You are killing me man!  I discovered landjaeger last year and it had become my favorite.  After spending a ton having deer pepperoni made for my daughter, I really want to learn how to do my own landjaeger and pepperoni this fall.  I would love to try and make some elk landjaeger!

I have had issues getting meat grinders to work with stuffing.

Usually I do use a grinder to stuff. Only had issues a couple times. Just make sure to take out the plate & cutter and you should be fine. If stuffing smaller casings use the high speed auger.

I had my son, wife and brother try it and they didn’t care for it either. I am not sure what it is. I knew it wouldn’t taste just like store bought, but I couldn’t eat it.

My wife and son just weren’t into the flavor. I could almost taste what I would describe as a “metal” taste. Kind like biting a piece of foil. My brother had a similar response.

I gave a sample to a couple coworkers and one said that it was good and another said it was great so they both got big bags of lj the next day. I sent the rest to my wife’s family in Pasco.

I don’t know if the spices/salt/cure and cookie sheet had some chemical reaction or what, but I have never made sausage that no one in my house didn’t want to eat.

There is a spics that is heavily used in landjagers and I cant remember what it is but I wonder if it that spice you may be talking about . The guy that made mine cuts that certain spice in half. ?????

We are our own worst critics. I've made some pretty horrible sausage that other people liked as well as some awesome stuff that others didn't care for.  Although it's a pita, I do 2.5lb at a time for new recipes.  Maybe your family is just used to perfection by now? :dunno:  It looks good from here though

I hear ya Mossy and I agree that we can judge ourselves harshly when we are accustomed to a certain level of success or quality, but damn.. I was disappointed.

This looked great, felt great, smelled great and even the bite was great, yet I couldn't handle the harsh aftertaste.
