Title: summer sausage storeage question
Post by: DoubleJ on January 20, 2013, 05:24:46 PM
I'm about to vacuum seal my logs and freeze them.  Does the paper covering offer anything or can it be removed before vacuum sealing?

I just wondered.  There's some moisture between the meat and casing and I didn't want that to mess it up.

I cut it off and dry the stick before sealing.
