Used a Cabelas Maple Suger Brine from Sat eve till this morning(Monday). Just followed the directions. Actually followed them backwards since my smoker is a wood fired smoker. I cannot just use heat as the directions say, then add smoke. I've always got smoke. They did turn out great though. Even my wife loves em. 14 breast patties from 7 Bluebills. They won't last long on the counter.

Smoked duck is great. I usually smoke mine whole and baste with a little honey or maple syrup.
