Has anybody made sausage out of beef hearts? Ive been searching recipes and cant find anything.Ive got two large beef hearts from cows my brother in law just butchered.Im thinkin add some pork fat and make some sort of jadgwerst? thanks for any replies.

Heart is gonna be extremely lean. I don't like adding just pork fat (bad experiences with spoiling beef soot). I would do a 50 / 50 mix of pork shoulder or ground pork (high fat content) with the heart. Grind them twice...once in course and the next with a fine plate.
Whatever you do, you should follow up with how it turned out. I would be curious to know.

thanks i wasnt sure if i should use just fat or shoulder since the hearts are so lean. I just so happen to have about 5lbs of shoulder. ill get to grindin and see what happens.
