Title: Just ate my first bear steak....and loved it.
Post by: jrebel on February 04, 2013, 07:13:21 PM
I just ate my fist bear steak.  I cubed it and marinated it in lee and perrins, little salt and pepper with a touch of dried thai red pepper flakes.  IT WAS AMAZING.  Seriously I think it compares with some the best elk I have ever eaten.  I need to kill more bears.

With all that being said, it was a very young bear that I killed this year.  Maybe the old ones are not as good..... :dunno:

Truely....I was a little affraid.  I was keeping the meat till I could make jerky.  I am making jerky as we speak.  I had a little bit of meat left so decided to cook it up.  Now I am kinda mad I didn't keep more.  I bet the jerky is amazing too.

I never could understand why so many people dont like bear meat, the high country berry fed ones are some of the best eating wildgame out there.

I have heard that if they get into something rank they can taste not so great , but I guess thats what sausage is for. :chuckle:

Cubed or stir fried for the older ones and they still taste great. You can also make battered finger steaks that are hard to beat for taste!

I too have always had a hard time understanding why some people hate bear. All three bear I have killed were berry eaters and were far better eating than any elk or deer I have ever killed.

Depending on the how quick the animal did dictates how much adrenaline was surged through the
Bear before dying. If you soak your meat in milk before cooking it the milk will help neutralize the
Wild Gamey flavor. My Grandma taught me this ........Thanks Granny!

My oldest was 23.5 years old and it tasted fine. Same with a 14 yr old.

I prefer roasts to steaks but my fave is canned bear.

OMG.... :yike:  23.5 years old.  Who would have thought a bear would live that long.  Learn something every day.

I shot a young bear last spring also, it may have been the best meat I have ever had with the exception of moose.  Country sausage was amazing and 30 pounds didn't even last 6 weeks.  Totally want to start bear hunting more

I wish I could figure the damned things out.  I'd love to finally bag one.  I hear nothing except how good they are.

Man that bears hairdresser was sure confused on what color to make him, never seen one like that.

I have eaten 1 1/2, 10 1/2, and 15 1/2, the older one ate as good as the young one. When I opened his stomach I thought it was jelly ready to pour in a jar!

Bears are part of the pig family. Thus (boar/sow etc). They are wild like anything else. Wild turkeys dont taste like Costco Turkeys, QFC pork doesnt taste like wild hog, and bear meat can be wild. Look up the protein vs fat of wild game inlcuding bear meat vs what we eat from the store like chicken and see how amazing wild game including bear is. It's how you cook it no different than anything else. It makes the best sausage and I always love the wine and garlic marinated roast. Remember to cook it all the way or freeze it accordingly to get rid of any TRICHINOSIS :chuckle:

Ate some spring bear 8.5 y/o. Really mild with no gamey taste. A little greasy as some describe it, but no greasier than a beef steak. Better than deer for sure, not quite on par with elk but dang close. I loved it.
