Title: Smoked Trout

I went over to Williams lake with my dad, brothers, uncles and cousins for a weekend of fishing.  Great fishing, great weather, and great company!  My dad and brother wanted to have some smoked trout, and since I was smoking all mine I did theirs too.  Here's how I did it, and IMHO it turned out GREAT!   :drool:

The brine...
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup non-iodized salt
2 quarts water
1/2 cup apple juice

I let them soak overnight, then rinsed them off real good and toweled dry.  I let them dry in the fridge for about an hour, then dusted the insides with old bay and set them up on the smoker rack.

Then they went into the Big Chief, and got 3 doses of applewood smoke over the course of about 4 1/2 hours.  The final results...

Nice. I used to fish at Williams when I was going to school in Cheney.  They got some real lunkers in there!

Thanks for the post. You just made me go out and clean my smoker. Looks great now, Just needa get some fish!
I wont go back to the lake though until they find that guys body, Last thing I want is to reel in a body  :o

I lied, I went back yesterday and me and the lady got 4. Spanaway lake, 55 year old man slipped out of his vest while tubing and drowned.  :rolleyes: Im having a hard time believing that, It was 11 feet of water. The did sonar sweeps twice, and still never found nothing. Next few days will tell if hes out there. Body will begin to bloat and he will come to the surface. RIP if hes still out there though.

Thanks for the update hope they find the guy.  Post some pics if you smoke your trout.  About 5 or 6 years ago my wife found a dead body while we were camping for my birthday and to this day she wont go camping there again.

Sad story. Thats the last thing I need to see trying to fish lol. Wont damage me much though. Seen it all.

never done trout yet, usually stay away from them little suckers, never seem to get the bones out very well.

If your worried about bones. Deep fry them at higher temps. The bones turn into crispy bonus's that are delicious. Thats what we do when we get some monster sized rock bass. Btw. Rock bass, are pretty good eatin. Impossible to debone though.

When I smoke trout, I butterfly them and just pull the backbone out, lay them open skin side down. They dry out quick if you don't watch you temp and time.
They sure are tasty!

I like mine like jerky sometimes! Depends how much meat I have. I just put 8 trout into the smoker about an hour ago. Cant wait.
I just filet them out like any other fish. Brine em overnight. Dry them with papertowel. Smoke em. Put in fridge for about 4 hours in a bag. Helps the smoke flavor marinate. Kinda like leftovers :chuckle:
Leftover charbroiled bbq chicken. Mmmm

man i got to go fishing! one thing the fam liked was to butterfly em, lemon peper & apple wood.
