Title: flame went out in grill, meat still ok
Post by: sirfunkeybut on July 04, 2013, 10:05:33 AM
I started some ribs this morning at 5 and didn't realize that the flame was out for about a half hour. The meat was already cooled down.  Since they've cooked for 4.5 hrs at 250 will it be safe to eat? there's also a pork butt in there as well.

I would put it in the oven and get the temp back up to 165 or so before I would trust eating pork, it would be different if you knew the temp when the fire went out !!

I mis-understood you I guess, I thought you were wanting to eat it right now, its fine you started the thing back up just be sure it gets to an internal temp of 165 before you eat it. If you think its taking too long at 250 just bump it up a few degrees till you see a slow increase in internal temp, I would think 5 hours is about half way to a perfect pork butt at 250 !!
