Recently picked up a charbroil duo grill with the side smoker. Thinking of trying to smoke a butt and need to get a thermometer for internal temp. Also, do you guys trust the grill temp to the factory installed thermometer? This smoker is only about a year old so I figure its in good shape but want to be accurate.

I use a dual probe remote thermometer.
One probe in the thickest past of the meat, the other on the grating beside the meat. I dont care about the temps where the factory thermometer is located, I care about the temperature right at my meat.
Remote lets you keep the door to the smoker closed and you never have to open and lose heat resulting in a longer smoke time to get the temps back up.
Google "Dual probe bbq thermometer" and pick one to your likings. None will last a life time, but some of the more expensive ones will outlast others.
I have a BGE one ( i think) thats lasted 2 years. It will be replaced in a few months though because its about burned up.

I have gone through so many thermometers the best I used was a digital remote probe put it in the meat and cook cord was really long so you can put the unit away from the heat unfortunately the lead melted. I tried a glass one for a while temps was not calibrated right nor was it adjustable. I had two digital ones that followed the first worked great for a few years then the temps started being off I was making shoe leather out of steak also not adjustable. The one I use now was less that 10 bucks it has a calibration screw on the back I have had to adjust it once in the 2 years I've owned it and it was only off 2 degrees from 212. Long story short it need to be able to be calibrated.

I wrap my leads (wires) with aluminum foil, and am only using them for long cooks under 250 degress, not steaks and things like that, so I have never burned one. Don't know if the foil wrap helps or not?? but it doesn't hurt.
