Title: Smoked salmon brines

I tried a couple different smoked pink brine's yesterday. they both came out really smoked flavor and tasted great.

I think on my next brine id like to get them almost a little sweeter or maybe teriyaki. Anyone got a got teriyaki or "sweet" smoked salmon recipe?

I would just add brown sugar to the one you liked the best. Also, put a coating of brown sugar on just before it goes into the smoker.

Will that give it the glazed look? the ones i did tasted great but looked dried out. how do i get the shinny glaze look?

Yes it will give you the glazed look! Coat with brown sugar, let sit for a couple hours until the brown sugar dissolves, then pop them in the smoker.

You can also add maple syrup to your brine.

1 hr before its done mix some brown sugar and 1 tsp NO MORE, of molasses into a thick paste if you will, and smear it on, itll melt nice  :tup:

 :yeah: Also a good brine you can buy is Scott's fish brine, they sell it at bimart but to make it sweat I put a cup of brown sugar on the fish and let it soak in that also for 6 hours.

Thanks KC, how much brown sugar per molasses?

i just mix it to a liquid but thick paste, pretty hard to not get right either way like Alchase said it will dissolve and or melt  :tup: add that 1-2 hrs before you think its done. Its different but usually good  :tup:
