Title: Dehydrated veggies

Thinking of drying some stuff from the garden and vacuum packing soup mixes for camping. Anyone done this, if so what did you use for spices and what would you do again and not do?
I'm thinking of drying the following.
Beet
Carrot
Potatoe
Onion
Zucchini
Jalapeņo
Green pepper
Almost forgot, ginger!

Can I dry fresh garlic cloves to add?

Are you talking about dehydrating? I know onion will cause it to smell pretty bad after, if so, do potatoes after onions and it will take the smell out. Sorry that's all I got  :tup:

Yes dehydrating. I did a little bit of onion and green pepper overnight just to get started, onions didn't produce too bad an odor that I noticed.

Everything but zucchini for us it does not come out well. Onions do put out an odor when drying but they are great in trail meals and at home.
For trail and camping meals take a look at this site, I have and I am still trying out some of his ideas. So far they are good to go!
