A buddy stopped by with a box of salmon. Said here! Now that your tbs house is running go play. I'll be back in a week...............lol This morning I started to brine it maybe 10 to 15 lbs worth. 1 gallon water, 1 heavy cup b sugar 1 cup kosher salt 2 tbs garlic granuals, 2 tbs onion powder, 2 tbs cbp  4 fresh squeezed lemons and zest of all 4 lemons. 2 day brine rinse dry then smoke with either alder or pecan coin flip will decide lol  Pic will follow when smoking,

I smoked up about 10 lbs of pinks about a month ago with nearly the same recipe. and it cam out  :tup:

Cool!!! I tried this a month or so ago with lemon pepper and lemon juice. It was okay not the flavor I wanted. Hoping with this one I'll get what I'm lookin for.

my only suggestion that I will do next time. is to put some black pepper and minced garlic on top of the fillets before smoking  :tup:

I'll give that a shot on a couple fillets. It's what I did last time with lemon pepper. Though the lemon flavor  wasn't very pronounced.
