Every year that I am successful I make the following:
Summer Sausage
Breakfast Sausage
Italian Sausage
Bacon Burger (my own recipe)
Bratwurst (seasoning kit + sun dried tomatoes, cheese, and minced garlic)
I usually get a couple boneless pork shoulders from Costco and grind them up (course) without trimming them and mix that up good to distribute the fat. Then I figure out how much of each I am gonna make and round it up to make a package of seasoning mix...Usually they say something like 30 lb., so it will be enough to make 2-15 pound batches. Then I figure out how much ground deer or elk I have and distribute the ground pork so that I have the most in the breakfast and bratwurst. When using seasoning kits, always use a little less meat than the kit calls for, as they are not very strong, and you will wish you used more seasoning...
I also use hi-mountain and high country seasoning kits, both are good, and easy to use with no confusion.

The Sausage maker has some great seasonings that are a good starter sausage pretty basic but you can doctor them up to your taste and for the money they are the best value

PS Seasoning also has some great seasonings lots of different sausages they are all great and you dont have to do much doctoring to these their TexMex is a great snack stick a little on the hot side but not bad and their Willies Snack stick is a good one also with just a touch of heat

The Hi Mtn seasoning kits are great for a everything kit and they are priced well and have some great tasting sausages that can be doctored if you like and they have other great products like the buckboard bacon cure
