My wife can't eat gluten and even the nitrates mess her stomach up. But she loves venison, so I need to come up with a alternative to the store bought kit.

Where are you located? I will have to check on the nitrates because that issue doesn't bother me...

Not sure where you are finding gluten in home-made sausage recipes? I haven't seen a single pepperoni recipe with flour/flour products in it. :dunno:
There are non-nitrate recipes out there, but if I was using one, I would be tempted to not add any store bought pork to the mix.

If your not careful you get the gluten in the spices. Is wheat used in many things that you may think of like Soy sauce has wheat in it. so if your recipe requires Soy sauce you need to find the wheat free kind. LA CHOY makes gluten free soy sauce. There is a great Gluten free store in Lynnwood on old hwy 99/evergreen way called Jannells Gluten free market. She has all the new and up and coming products that are out there. long haul from Ssilverdale, but they have a FB page and you could ask there. They deal with all kinds of food allergies/issues so they are likely aware of nitrates that i am not.

Yeah all the store bought kits have gluten, and other ingredients to keep them from caking. My wife loves sausage and I want to make sure she can enjoy it. I think the "cure" is what has the nitrates in it.

The nitrates stabilize the color, it stays pink when cooked, and are preservatives.

Im a butcher by trade and the only gluten sausage we make would be bratwurst due to the beer. You want a sausage recipe? Hit me up, all I know is pork though we dont do beef or poultry sausage.

Big thing is I don't want to use a cure, because that really messes up her stomach. So the plan is to smoke for an hour or so, and finish off sausage in oven.
