got about 25pounds or so of geoduck and was wondering what are some good/differnt ways to cook em up?

cut into strips and fried.

Ground up and in chowder.

slice into wafers, pan fry in butter or olive oil, eat on big round crackers with some cheese.

Geo duck casserole!

I make one similar to this (I found this through google):

Directions

1. In a large cast iron skillet, brown 1 cube of butter and 2 thinly  sliced cloves of garlic.

2. Add sourdough bread crumbs and stir well until slightly toasted.

3. Stir in 1 tablespoon parmesan cheese and parsley. Set aside

4. In a medium saucepan, melt 1 cube butter and saute 4- 6 cloves crushed garlic.

5. Mix cornstarch into milk and add to the melted butter. Stir constantly, over medium heat until thickened.

6. Remove from heat and add black pepper, garlic salt and 1/4 cup parmesan cheese

7. Now assemble the casserole. Reserve 1/2 cup of breadcrumb mixture for topping. Place remaining bread crumbs in greased 9' pie plate casserole dish.

8. Add ground  chopped (I like the chunks) geo duck clams.

9. Pour the cheese/garlic sauce over the clams. Sprinkle with reserved breadcrumbs.

10. Bake at 350 for about 30 minutes, or until bubbly.

Raw! Try a nice geoduck ceviche (Spelling???) it's not really raw just cooked by natural acids instead of heat. Its the goods!!! :drool: Google it.

Yeah!!!!! That can be killer, as mentioned above, the citrus juice (acid) cooks it, I love me seviche

Clam cakes is what I'd make, or a hefty chowder with some halibut, salmon and king crab, with lardons, huge chunks of different colored spuds, carrots and don't forget a splash of vermouth and a fresh loaf of bread with cheese fruit and sausage or smoked fish to boot, and a dark beer.... I've also heard you have to pound and tenderize the geoduck sometimes.....
