I shot a Canadian goose this last weekend and am wondering about peoples favorite ways to cook them. I was just going to half mine and put some cajun rub that I love on it. But, I'd entertain advice or suggestions.

Here is my Roast Goose Wrapped in Bacon
1 whole goose skinned
2 apples peeled and diced
1 medium yellow onion
2 stalks of celery
1 egg
1/2 pound sweet Italian sausage
6 slices pepper bacon
1 bag of stuffing
Place stuffing into a large bowl. Chop apples, onion and celery and add to the stuffing. Remove casings from sausage. Place 2 Tbs. of butter in a heated skillet and add sausage. cook the sausage in the butter until cooked and then add all to the stuffing mix. Add egg and enough water to moisten the stuffing. Rinse goose and season with sea salt and pepper, stuff goose with the stuffing and then wrap with the pepper bacon. Place in the oven at 350 degrees for about 1- 1 1/2 hours.
