I inherited the sausage press, so now I need to build the sausage smoker. I have a fish smoker and offset "high heat" smoker, but need some thing for summer sausage. Anybody have any plans for some sort of mini-outhouse smoker for propane that keeps the heat down low enough for sausage? Links?
Cloverdale summer sausage is hard to beat versus many meat shops products, but I am ready to try my own.

hawgdawg has a great little stainless smoker project for sale, that would make a great pot for a cold smoker pit for sausage, then just do a smokehouse :tup:

Not exactly the plans I was thinking about. Here is the stuffer I used years ago and it worked good and now own.

seen a stuffer thread, but nothing like this showed up.
cinder block bottom, with wood shack smoker on top is what I'm thinking. Don't want the whole thing to go on FIRE. One unit is where I am at. There was one guy on here a while back that had some link to plans. I got some horns for a handle but are to big.
It's a shame they don't smoke fish in sausage smokers, but I have used my offset when I first got it for fish and then the next chicken cook tasted like fish.
Need another cooker and still thinking.

then you didnt pay attention, the firebox was NOT in the shack it was a remote pit with a dryer tube runn9ing to the shack for smoke. .
