Title: the Fajita thread

cookin up some fajitas



got some favorite recipes?   I used walla walla sweets, the fajitas ended up being too sweet for my tastes.  Next time I'll use the rankest strongest onions I can find  :chuckle:
I also used a splash of Avocado oil,  went good in it.

I wanted to get a plow disk cooker, but geesh they want a lot of $ for those.  So I went to cash and carry and got a huge Wok,  it works well!
The wok is 19 inches across the top and 5 inches deep.

Doesn't hold heat like a plow disk would, but with a constant propane flame it gets hot.

I need to make a ring to set it on.

I think we have these every week in our house. I prefer seasoning my chicken breast and fileting them in half before I place them on a hot grill. They cook fast and get great char marks. Slice into strips. The burnt edges give amazing flavor.

I also prefer an eye burning yellow onion instead of a sweet. Cook the veges in a hot skillet or wok to give them little burnt spots. I like mine warm with good crunch. Don't want any limp veges.

once a week in my house  :) Using regular onions are perfect because mixing them with the fajita sauce or seasoning makes them just as good as any other.  Save the True walla walla and especially the Vidalia's for the special dishes.  We use thin cut flat iron steak and always use the true home made thin shells lightly grilled up first.

Venison fajita's  :tup:


So I'm making progress on the perfect fajita's  :tup:

last time (the pics) the fajitas were too soggy.


So this time I made it with fresh Ancho chili peppers,  I sliced them in half and smoked them to dry them out some and give em a bit of smokey flavor. 
Also did the same with Serrano peppers.
The onions were strong ones, kind that make you cry just chopping them in half and they worked much better than the sweets.

I'm going to smoke the peppers more next time and maybe the onions too a little bit. 

I sliced up venison and used that as the meat,  it was tasty.

One benefit of living on the east side of the mtns = free used plow discs :chuckle: 
I've got a normal sized one and a monster that works well for big get togethers.

That is how I order them in the restaurant just to embarrass my wife!  I did it with a group of friends and had beer spit on me.   :chuckle:
