Title: Smoked a batch of oysters yesterday.

First mistake was using the extra small oysters we got at Costco. They shrink up to 1/4 of the raw size. None fell through the grill, though. I just set one grill rack on top of the other at a 90° angle. Seemed to work well enough but a rack designed for small food would be better.

I marinated them for 24 hours in a brine I found on the web under something like "Best Darn Smoked Oyster Recipe!".
Rinsed them off and put them on at 225°. Checked them after an hour and they were almost there. Got busy doing something else and failed to check them until another hour had passed. Over half of them were indian candy and the rest were well done.

They're going in the trash. I don't like the taste and neither do I care for crispy critters. Waste of a good quart jar of oysters. Next time - stew.

I would recommend blanching them in boiling water for a few minutes then move on to brine and smoke.

That might add some "body" to them. I'll try it next time I get some medium-size oysters. Thanks.

I've smoked quite a few of them. Blanching does help with "tightening them up".   :yeah:  I think its time to smoke a batch now....

I love smoked oysters, but have yet to make a successful batch. In fact, I haven't made a batch yet that I could stand to eat.

Ive brined and smoked a few turned out pretty good. Then went one step further and tried canning them. The flavor was great. The texture is what went south 1/2 pints of nothing but mush  :bash:.

 :drool: o man love me some smoked oysters! i buy the tins of them, me and my girls eat them like crazy they go so well with smoked cheese  :drool:

I usually boil them in the brine right before I smoke them. take them out of the brine then get the brine boiling drop em for a couple minutes then smoke they turn out great

OK, what brine do you use?  How long do you smoke them.

I can blanch them to tighten them up. 

I have access to these critters.  Last time I went out to a friends place I filled 2 five gal buckets in about 10 min.
