Picked up a 2 pack of shoulder at URM cash and carry in Spokane. One was for sausage, one going on the smoker for pulled pork.
Man they were the fattiest pieces of meat I have ever had. Bet I trimmed 1/4 or more of the one for sausage, smoked the other as is but probably lost 1/4 of it in fat drippings and during the pulling process.
Wish you could tell from the packaging what you are getting.
I do a fair amount of pulled pork and sausage and most of the others I have purchased were fairly consistent. And all purchased from the same place.
Anyone run into this issue? or just my bad luck?

I have had a few really fatty ones of later from c&c and Costco.  Had to split muscle groups and scrape away huge pockets before shredding..
