Pulled The Recipient Off The Internet. I'll Report Back In 5 To 7 Days. (Marinating Time).
I Did Use my Injector On The Roast Also.

Sled...if I may make a suggestion. If the roast fits I would put in a large zip lock bag and get all the air out. You want it totally submerged I believe for best results.
-
Corned bear is one of my all time favorites. If you steam it done it will be firm and you can slice super thin for Rubens' to die for! But cooking same as beef is so good it's hard to sacrifice for a sandwich.

If you can vacuum seal it totally worth it

Or get a brand new 5 gallon bucket from home depot and use that...

We had it processed like chipped beef when I was a kid. My brother and I would sneak down to the basement and eat it right out of the freezer.

I am not a fan of bear meat at all. But this seems like a great idea.
Also does anyone know what the stuff is called that you put in the brine that keeps the meat from turning grey? And where did you buy it at?

. I believe that's what the Morton tender quick salt is for. It's a meat cure. There is also the pink salt, that does the same thing. Not sure what it's called though.

Yum... Tagging.

I've corned some deer roasts. they're great.
-
The Pink salt is Prague Powder #1. It contains mostly salt and a bit of Sodium Nitrite. It is also called Instacure. The Tenderquick is basically the same thing I believe (I have never used it). The bear roast should turn out excellent. It is my favorite to make the corned roast out of all big game meat.

it was the same price i paid for a 5oz jar of it 1 year ago, took me a year to go through it...but I thought i'd better buy in bulk.

Seems like a waste of a good roast to me, but each there own. :dunno:
-
Disagree fully. However, if you wish to cook up a roast with your method I'm fully prepared to try some. I'll bring the brew.

Tonight Was The Night!!!!! This Meat Was So Good. I Honestly Think It Was Better Than Corned Beef!. If You Have Never Tried It, I Recommend Doing So If You Like Corned Beef.
I Have Not Cooked A Regular Roast Yet, But Being The First Bear Meat In The House We Want To Try Eating It Every Way We Can. I Don't Regret The Corned Recipie At All.
Below Are The Before, And After Crock Pot pics  This Bear Is Absolutely The Best Game Meat We Have eaten :IBCOOL:

I have used hank Shaw's corned venison recipe a few times. It's one of my favorite things to do with my game meat.
-
Anything with corn sounds good to me,says the red neck from eastern Washington.

Tagging, hopefully I'll have a fresh roast soon!

My wife does elk quite a bit. I took a corned bear ham to a Christmas party about thirty years ago, way before I was married, and after the party someone came up and said: That was great, I have never seen corned beef with a bone in it before. I said: Neither have I.
Corned bear roast - mmm...mm... good

How do you all think corned bear would turn out on a traeger?
