Title: 8 Pound Chuck Roast on the Rec-Tec.

I was at Safeway and saw that they had Chuck Roast on sale for $1.99 a pound.  I asked the butcher if he would cut me an 8 pound chuck roast which he did with no problem.  What a buy at $1.99!  I trimmed the roast and Rubbed it with Garlic Olive Oil, then applied my rub all over it.  I put it on my Pellet stove with Pecan pellets.  11 hours later it was done at 198 IT.  I have to tell you that I have done a ton of full packer briskets, and have always wanted to do a big Chuck Roast just like my briskets.  I will be watching for the sales of Chuck Roasts in the future because i will be cooking this cut of meat ALOT!. 

This cook turned out better than what I was expecting.  It had great flavor and was very tender and full of juices.  It also makes very good sandwiches the next day.

Question, why trim it? Never done a roast this way.... :EAT:

Hi Ice, the reason I trimmed it was because when the butcher cut it up for me, I asked him not to trim any of it, because they have a tendency to trim to much fat off of it, so I trimmed some excess but that was about it.  If you haven't tried this Ice, I would highly recommend it.  We made Beef stew with the left overs and I'll tell ya what Ice, it will make you do hand stands in elk camp naked, it was so good..... :yike:  I can't believe I just said that.  I won't be able to sleep tonight!

 I'd love to taste the chuck roast but I ain't going anywhere near your elk camp! :chuckle:
