Anyone ever try to shred and vacuum seal zucchini for the freezer? I have so much and want to preserve some for zucchini for bread for the winter.
Anyone ever try this?

Yep. Just done a few yesterday.

I have been making the bread in several different ways and freezing it.

I've done this in the past as well. I freeze it in two cup batches (two loaves of bread). The one tip I will offer is that because the freezing draws moisture out of the zuchini, I add a little extra flour so the bread isn't soggy.

Did it last year though I didn't use it. Way to soggy or mushy :twocents:

I do it every year and yes forgot to add that when you thaw it to make bread, muffins etc just squeeze some of the liquid out of it before use... :twocents:
