Figured it would be best to move this out of the pellet grill discussion..

Saw this article and it got me thinking about making some sort of kit or set-up to slide into my GMG to kick the pizza/baking up a notch.  Be nice to be able to bake with it like a real wood fired oven.  From the link and other sources it sounds like those ovens run 800*  :yike:

Having the upper steel plate for downward radiation sounds interesting.  I already have a stone, just need a 1/4 steel plate and something to frame it up with.

I cook them on my Green Egg at about 700.  Best pizza ever.

Awesome!  Any special set-up or way you arrange your Egg to do that?

Realized that I had not updated this thread with what I did and how it went..

After inquiring on that thread I went out and grabbed a few fire bricks to try my hand at it.  I wanted to go (as is my nature) CHEAP DIY and came up with this.

Bit of a low budget DIY run-what-u-brung attempt this weekend.  I have not been able to find the fire brick slab / hearthstones here locally to use as a top plate and don't want to drop $80+shipping for a baking steal right now..

I have been able to find basic Fire bricks though and already have a thin 15" pizza stone (.35"). 
I will put the side dampers in to act a bit like the vaporizers you guys are using, just space them away from the fire pot shield to let lot of heat go straight up.

Then I am going to use the grease tray as my top baking steel over the fire bricks.  Since I am taking it out anyway, might as well give it a whirl!  It is only .1" thick so not going to have a ton of radiant heat, but I figure it is a vast improvement over just a stone in there with the grease tray in normal position blocking the stone.

Total of $8.50 for a two fire bricks after tax.

I had issues and have a bit to learn about this whole home-made thinner crust pizza game, but the method worked.

My wife has done pizza on the Treager with a Pizza stone and it turned out great. Good idea on the fire bricks and steel reflector up top!  :tup:

Can't claim the idea as my own, never would have thought of it.  Stumbled on it over at pelletheads and the link on the 1st post...

I just got lucky in that the GMG has a big one piece steel drip tray.  I figured it was free so why not give it a shot!!  Worked pretty good.  a Baking steel probably would work better but those are $80+

For the Egg you can buy an accessory called the Plate Setter.  It's a thick ceramic plate with 3 leg-like structures.  It sets on the grate so the ceramic plate is about 3" above the grate.  You can put the pizza directly on there but I found it burns a bit when you get the Egg really hot.  So what I've done is put a steel plate on the grate and then put the plate setter on top of that.  Then there is no direct heat under the plate setter.  The heat then comes up around the outside of the steel plate.  Now I can crank the Egg up to 700+ without burning the crust and they cook literally in minutes.

I have had MANY delicious frozen foods cooked in an egg that normally only tasted OK.

 Nice mod and pizza. Love homemade pizza or calzones. Still trying to tune in the webber kettle grill. Hopefully some time next year.

That link I had in 1st post is a add on you can buy for your weber and where I stole the idea from..

Just watched a video from Gary House cooking everything outdoors. Looks like a winner winner pizza dinner :tup:
