Nothing more, nothing less. Post em up ;)
Elk meatloaf:
2 lbs elk burger
1 diced red onion
1 diced red pepper
1 large egg
1 cup italian bread crumb seasoning (I like the stuff from Safeway... has a good garlic flavor)
1 tbs winchester sauce
1/2 tsp cumin
1/2 cup grated cheese (extra sharp)
1/2 cup ketchup
Sweet tomato sauce:
1 can (16 oz) Tomato sauce
2 tbs brown sugar (can use more if you like)
A few shakes of allspice (I actually use Alpine Touch, Montana's Special seasoning).
Sauce - Can of tomato sauce, brown sugar, and seasoning... place in small pan to simmer.
The loaf - Preheat oven to 350 while mixing ingredients. Rub sides and bottom of teflon meatloaf pan with oil. Form loaf and place in pan (leave a canoe like indent in the top); cover pan with one layer of tin foil. Put it in the oven for 1 hour... At around 45 minutes, remove foil and place 1/4 cup of the sauce on top. Continue to cook for 15 to 30 minutes, depending on wellness desired. Once out of oven, let cool for a good 10 mintutes before slicing. Drizzle each piece with some of the sweet sauce. Serves well with any kind of tatos and veggies.

Smoked elk roast. Preheat smoker to 200. Lay 5 strips of bacon over the top of the roast. Lather your choice of bbq sauce over the whole thing, finish with your favorite rub. I like Rufus teague. Now, mix in a bowl or spray bottle melted butter, pineapple juice. And spray or lather that on every half hour. Smoke for 5 hours or till internal temp is 140 to 150 degees. Enjoy.
