Here are some pics of my weekend of sausage making. Ended up with 175 lbs of summer sausage and 50 lbs of pepperoni.

ya know its funny you mentioned that because when I saw this thread I wanted to post a pic of you, Nick and Kevin, all three of ya in the front seat of a truck.. and fellas the things these so called men do in the front seat of that truck....lol... :chuckle:

Are you the young guy who I was told by ShaneVG that does it for friends and family ? If so, I had some bear pepperoni that I ate with him and his Dad 2 years ago..........I want some.

WOW, That is a lot of pepperoni and sausage. What are you planning to do with it? That is a lot to consume in a year or so...

Is that all game meat, or some beef in there as well? Quite the successful season if all game (besides the pork part anyways).

When I make my summer sausage, I lay in in the racks, how high above the heat source do you hang it? I would love to do more in a batch!

Thanks for the comments, I'll try to answer some questions.
It's not all for me, I invite friends and family over to my place to process their game. I normally just sit and "coach" during the grinding/mixing/stuffing steps and then I smoke it the next day in my smokehouse. During a typical fall/winter about 1500lbs of goodies are processed here.
I start with Butcher-Packer venison summer sausage and snack stick kits, only use about 22lbs of meat total (17 lb lean venison +5 lb pork shoulder) for a 25lb batch, and then add extra spices to everyone's liking.

Got any tips for the snack sticks? Any do's and dont's? Also can you share a pic of your smokehouse? Igot a meatgrinder with sausage attachments for Xmas and I'm going to be building a smokehouse
