Great idea...you guys bring the 'rats and I'll get my wife to cook. She's amazing...part of her job is reviewing cookbooks. My life is pretty good. :)

During trapping season we had so many of these we would only keep the hind legs.  They were every bit as good as the tenderest cottontail.  We'd stew them with onions and serve with dumplings and german style read cabbage.  I will say that some folks got a little nervous when I pulled a package marked "Rat Legs" out of the freezer.
